Ingredients

  • 12 oz (340g) spaghetti or fettuccine
  • 6 tbsp (85g) unsalted butter
  • 4 cloves garlic, finely minced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup (50g) freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (optional)
  • 1 tbsp lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain pasta.
  2. Heat butter and olive oil in a skillet over medium heat. Add garlic and sauté 1–2 minutes until fragrant, avoiding browning.
  3. Add drained pasta to the skillet, tossing to coat. Add reserved pasta water as needed for a silky consistency.
  4. Season with salt and pepper. Stir in Parmesan cheese until melted. Add lemon juice and parsley if desired.
  5. Serve immediately.
