A creamy and satisfying pasta dish made with tender chicken sausage and a rich tomato-based sauce, perfect for comforting family meals.
Pasta – 400 g (14 oz) penne or rigatoni
Chicken sausage – 450 g (1 lb), sliced
Olive oil – 2 tablespoons
Onion – 1 medium (150 g / 5 oz), chopped
Garlic – 4 cloves, minced
Crushed tomatoes – 400 g (14 oz)
Heavy cream – 240 ml (1 cup)
Chicken broth – 120 ml (½ cup)
Parmesan cheese – 60 g (½ cup), grated
Italian seasoning – 1 teaspoon
Paprika – ½ teaspoon
Black pepper – ½ teaspoon
Salt – to taste
Fresh parsley – 2 tablespoons, chopped
Cook pasta in salted boiling water until al dente. Drain and reserve 120 ml (½ cup) pasta water.
Heat olive oil in a skillet and brown chicken sausage for 5–7 minutes. Remove and set aside.
In the same skillet, cook onion until soft. Add garlic and cook briefly.
Stir in crushed tomatoes, broth, seasoning, salt, and pepper. Simmer for 8–10 minutes.
Reduce heat and add cream and Parmesan, stirring until smooth.
Return sausage and pasta to the skillet and toss to combine. Add pasta water if needed.
Garnish with parsley and serve warm.
Freshly grated Parmesan provides the best flavor and texture.
