A rich and creamy tortellini dish designed for date nights, combining cheese-filled pasta with a velvety cream sauce and sun-dried tomatoes for a truly indulgent meal.

Ingredients

·         1 pound (16 oz) cheese tortellini (fresh or frozen)

·         2 tablespoons olive oil

·         3 cloves garlic, minced

·         1 cup sun-dried tomatoes, chopped

·         1 teaspoon red pepper flakes (optional)

·         2 cups heavy cream

·         1/2 cup grated Parmesan cheese

·         1 teaspoon dried Italian herbs (or 1 tablespoon fresh chopped basil)

·         Salt and black pepper, to taste

·         Fresh parsley, chopped, for garnish

Instructions

1.      Cook the tortellini in salted boiling water according to package instructions. Drain and set aside.

2.      In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes; sauté 1–2 minutes until fragrant. Add red pepper flakes if using.

3.      Pour in heavy cream, reduce heat, and simmer for 3–4 minutes.

4.      Stir in Parmesan cheese and herbs. Season with salt and pepper. Continue cooking until smooth and creamy.

5.      Add cooked tortellini to the skillet, tossing gently to coat.

6.      Serve immediately, garnished with fresh parsley.
