Fresh Mango Salad with Lime Dressing is a light and refreshing salad featuring ripe mango, crisp vegetables, fresh herbs, and a tangy citrus dressing.
3 ripe mangoes, diced
1 red bell pepper, thinly sliced
1 small red onion, thinly sliced
1 English cucumber, diced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1 tablespoon honey or maple syrup
2 tablespoons olive oil
1/4 teaspoon salt
Pinch of red chili flakes optional
1 avocado, diced optional
1/4 cup toasted cashews or peanuts optional
Dice the mangoes and place them in a large bowl.
Thinly slice the bell pepper and red onion. Soak onion in cold water for 10 minutes if a milder flavor is desired, then drain.
Dice the cucumber and chop the cilantro.
In a small bowl, whisk together lime juice, honey or maple syrup, olive oil, salt, and chili flakes if using.
Add bell pepper, onion, cucumber, and cilantro to the mango.
Pour the dressing over the salad and gently toss to combine.
Fold in diced avocado if using.
Sprinkle toasted nuts on top before serving.
Let the salad rest for 10 to 15 minutes before serving.
