Ingredients

·         12 ounces spaghetti or fettuccine

·         4 tablespoons unsalted butter

·         6 cloves garlic, finely minced

·         1/4 teaspoon crushed red pepper flakes (optional)

·         1/2 cup freshly grated Parmesan cheese

·         2 tablespoons chopped fresh parsley

·         Salt and freshly ground black pepper, to taste

·         1/4 cup reserved pasta cooking water

Instructions

1.      Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/4 cup pasta water.

2.      Melt butter in a large skillet over medium heat.

3.      Add garlic and sauté 1-2 minutes until fragrant, without browning.

4.      Toss in drained pasta and coat with garlic butter.

5.      Gradually add reserved pasta water to reach a silky consistency.

6.      Season with salt, black pepper, and red pepper flakes if using. Add Parmesan and parsley, toss to combine.

7.      Serve immediately, topped with extra Parmesan if desired.
