Ingredients

    • Spaghetti or fettuccine: 400 g (14 oz)
    • Unsalted butter: 100 g (7 tablespoons)
    • Garlic cloves: 6 large, finely minced
    • Olive oil: 2 tablespoons
    • Red chili flakes: ½ teaspoon (optional)
    • Salt: 1½ teaspoons, or to taste
    • Black pepper: 1 teaspoon
    • Fresh parsley: 30 g (1 cup), chopped
    • Grated hard cheese: 60 g (½ cup)
    • Pasta cooking water: 120 ml (½ cup), reserved

Instructions

    1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 120 ml (½ cup) pasta water and drain.
    2. Melt butter with olive oil in a large skillet over medium heat.
    3. Add minced garlic and cook gently for 1–2 minutes until fragrant.
    4. Season with chili flakes, salt, and black pepper.
    5. Add cooked pasta to the skillet and toss well.
    6. Gradually add reserved pasta water, tossing until sauce is silky.
    7. Remove from heat, add parsley and grated cheese, and toss gently.
    8. Serve immediately.
