Shrimp – 500 g / 1 lb, peeled and deveined
Spaghetti or linguine – 400 g / 14 oz
Unsalted butter – 60 g / 4 tbsp
Olive oil – 2 tbsp
Garlic – 6 cloves, minced
Red chili flakes – ½ tsp (optional)
Lemon juice – 2 tbsp
Fresh parsley – ¼ cup, chopped
Salt – 1½ tsp, or to taste
Black pepper – 1 tsp
Reserved pasta water – 120 ml / ½ cup
Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
Season shrimp with salt and pepper.
Sauté shrimp in olive oil and half the butter until just cooked. Remove and set aside.
Add remaining butter and garlic to the skillet and cook briefly until fragrant.
Toss pasta with the garlic butter sauce, adding pasta water as needed.
Return shrimp to the skillet and mix gently.
Finish with lemon juice and parsley. Serve immediately.
