A rich and creamy one-pot pasta dish featuring tender chicken, sun-dried tomatoes, and a luxurious Parmesan cream sauce—perfect for weeknight dinners or a special evening.

Ingredients

·         2 tablespoons olive oil

·         4 boneless, skinless chicken breasts

·         Salt and freshly ground black pepper, to taste

·         1 teaspoon garlic powder

·         1 medium onion, finely chopped

·         3 cloves garlic, minced

·         1 cup sun-dried tomatoes, chopped

·         1 teaspoon dried Italian herbs (oregano, basil, thyme)

·         1/2 teaspoon crushed red pepper flakes (optional)

·         3 cups chicken broth

·         1 cup heavy cream

·         8 ounces penne or pasta of choice

·         1/2 cup grated Parmesan cheese

·         2 tablespoons chopped fresh parsley

·         1/4 cup grated mozzarella cheese (optional)

Instructions

1.      Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet or Dutch oven. Sear chicken 4–5 minutes per side until golden. Remove and set aside.

2.      Sauté onions and garlic in the same pan for 2–3 minutes until fragrant.

3.      Add sun-dried tomatoes, Italian herbs, and crushed red pepper flakes; cook 1–2 minutes.

4.      Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.

5.      Add uncooked pasta and stir frequently.

6.      Return chicken to the sauce, cover partially, and simmer until pasta is tender and chicken is cooked through (12–15 minutes).

7.      Stir in Parmesan and mozzarella. Adjust seasoning with salt and pepper.

8.      Garnish with fresh parsley and serve hot.



Notes

·         Use penne or similar pasta that holds sauce well.

·         Sear chicken first to lock in juices.

·         For a lighter version, substitute half-and-half for heavy cream.
