· Cream cheese – 400 g (14 oz)
· Plain Greek-style yogurt – 240 g (1 cup)
· Granulated sugar – 150 g (¾ cup)
· Large eggs – 3
· All-purpose flour – 40 g (⅓ cup)
· Vanilla extract – 2 teaspoons
· Lemon zest – 1 tablespoon
· Unsalted butter, melted – 30 g (2 tablespoons)
· Baking powder – 1 teaspoon
· Salt – a pinch
1. Preheat oven to 170°C / 340°F and line a 20 cm (8-inch) pan.
2. Beat cream cheese until smooth.
3. Add sugar and mix until creamy.
4. Blend in yogurt, then eggs one at a time.
5. Add vanilla and lemon zest.
6. Fold in flour, baking powder, and salt.
7. Mix in melted butter.
8. Pour batter into pan and smooth top.
9. Bake 45–50 minutes until just set.
10. Cool gradually, then chill or serve at room temperature.
