· 2 salmon fillets (about 6 oz each)
· 8 oz fettuccine or linguine pasta
· 1 tablespoon olive oil
· 2 teaspoons Cajun seasoning
· 2 tablespoons unsalted butter
· 3 cloves garlic, minced
· 1 small onion, finely chopped
· 1 cup heavy cream
· ½ cup grated Parmesan cheese
· ½ cup chicken or vegetable broth
· 1 teaspoon smoked paprika
· Salt and pepper to taste
· Juice of ½ lemon
· 2 tablespoons fresh parsley, chopped
1. Cook pasta according to package instructions. Reserve ½ cup pasta water.
2. Pat salmon dry, season with Cajun seasoning, salt, and pepper.
3. Heat olive oil over medium-high heat and sear salmon 4–5 minutes per side. Remove and set aside.
4. In the same skillet, melt butter and sauté garlic and onion until translucent.
