A comforting classic layered with rich meat sauce, creamy white sauce, and tender pasta sheets, this homemade lasagna is a reliable and satisfying dinner for any occasion.

Ingredients

·         2 tablespoons olive oil

·         1 large onion, finely chopped

·         2 medium carrots, finely diced

·         2 celery sticks, finely diced

·         2 cloves garlic, minced

·         500 g lean beef mince

·         2 tablespoons tomato purée

·         2 x 400 g tins chopped tomatoes

·         150 ml beef stock

·         1 teaspoon dried oregano

·         1 teaspoon dried basil

·         1 teaspoon sugar

·         Salt and black pepper, to taste

·         50 g unsalted butter

·         50 g plain flour

·         600 ml whole milk

·         100 g mature cheddar cheese, grated

·         50 g mozzarella, grated

·         A pinch of ground nutmeg

·         250 g dried lasagna sheets

·         50 g grated cheddar cheese, for topping

Instructions

1.      Heat olive oil and soften onion, carrots, and celery for 8–10 minutes.

2.      Add garlic, then beef mince, and cook until browned.

3.      Stir in tomato purée, chopped tomatoes, stock, herbs, sugar, salt, and pepper. Simmer for 30–40 minutes.

4.      Melt butter, stir in flour, then gradually whisk in milk to make white sauce.

5.      Add cheese, nutmeg, salt, and pepper to the white sauce.

6.      Layer meat sauce, lasagna sheets, and white sauce in a baking dish.

7.      Finish with white sauce and grated cheese.

8.      Bake at 180°C (160°C fan) for 45–50 minutes, uncovering for the final 20 minutes.

9.      Rest before serving.

Notes

Allowing the lasagna to rest before slicing ensures neat layers and better texture. This dish can be prepared ahead, frozen, and reheated without compromising flavour or quality.
