Crispy, smoky, and bursting with bold tomato-garlic flavor, this Bari classic transforms ordinary spaghetti into a magical culinary experience.

Ingredients

  • 400g (14 oz) spaghetti
  • 5 tablespoons extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon red chili flakes
  • 500g (17 oz) canned peeled tomatoes, crushed
  • 1 teaspoon tomato paste
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon sugar
  • Salt to taste
  • Freshly ground black pepper
  • Fresh parsley, chopped (for garnish)
  • Grated vegan Parmesan or hard cheese (optional)

Instructions

  1. Heat 3 tablespoons olive oil in a large skillet over medium heat. Sauté garlic and chili flakes until fragrant.
  2. Stir in tomato paste and smoked paprika for 1–2 minutes.
  3. Add crushed tomatoes, sugar, salt, and pepper; simmer gently.
  4. Cook spaghetti for 2–3 minutes less than package instructions; reserve ½ cup pasta water.
  5. Transfer spaghetti into sauce; stir to coat.
  6. Add a splash of pasta water and cook on medium-high, stirring occasionally until edges crisp.
  7. Drizzle remaining olive oil; allow noodles to fry gently, forming crispy spots.
  8. Adjust seasoning, garnish with parsley and cheese if desired, and serve immediately.

Notes

  • Use a nonstick or heavy skillet for best results.
  • Don’t over-stir to allow crispy edges to form.
  • Adjust chili for preferred spice level.
  • Can be made vegan by omitting cheese.
