Ingredients

·         12 ounces (340 g) pasta of choice

·         2 tablespoons olive oil

·         4 cloves garlic, minced

·         1 medium onion, finely chopped

·         1 can (14 ounces/400 g) diced tomatoes or 4-5 fresh tomatoes, chopped

·         2 cups fresh spinach, chopped

·         1 teaspoon dried oregano

·         1 teaspoon dried basil

·         1/2 teaspoon red pepper flakes (optional)

·         Salt and black pepper, to taste

·         1/4 cup grated Parmesan cheese (optional)

·         Fresh basil for garnish

Instructions

1.      Cook pasta in salted boiling water until al dente, reserve 1/2 cup pasta water, and drain.

2.      Heat olive oil in a skillet over medium heat, sauté garlic and onion for 3-4 minutes.

3.      Add diced tomatoes and simmer for 5-7 minutes.

4.      Season with oregano, basil, red pepper flakes, salt, and black pepper.

5.      Add spinach and cook until wilted, about 2-3 minutes.

6.      Toss cooked pasta with sauce, adding reserved pasta water if needed.

7.      Remove from heat, sprinkle with Parmesan, garnish with fresh basil, and serve.

Notes

·         For a creamier texture, add 1/4 cup cream or cashew cream.

·         Protein options: chickpeas, beans, chicken, or shrimp.

·         Adjust spice with extra red pepper flakes if desired.

·         Best served immediately, but can be stored separately for 2 days in the fridge.
