· 12 ounces (340 g) pasta of choice
· 2 tablespoons olive oil
· 4 cloves garlic, minced
· 1 medium onion, finely chopped
· 1 can (14 ounces/400 g) diced tomatoes or 4-5 fresh tomatoes, chopped
· 2 cups fresh spinach, chopped
· 1 teaspoon dried oregano
· 1 teaspoon dried basil
· 1/2 teaspoon red pepper flakes (optional)
· Salt and black pepper, to taste
· 1/4 cup grated Parmesan cheese (optional)
· Fresh basil for garnish
1. Cook pasta in salted boiling water until al dente, reserve 1/2 cup pasta water, and drain.
2. Heat olive oil in a skillet over medium heat, sauté garlic and onion for 3-4 minutes.
