Yogurt Marinated Chicken is tender, flavorful chicken coated in a spiced yogurt marinade and roasted or grilled until juicy and lightly caramelized.
2 pounds boneless skinless chicken thighs
1 cup plain Greek yogurt
3 garlic cloves minced
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
1 teaspoon salt
1/2 teaspoon black pepper
Fresh chopped parsley or cilantro optional for garnish
In a large bowl combine yogurt garlic lemon juice olive oil and spices. Mix until smooth.
Pat chicken dry and add to the bowl. Coat thoroughly with marinade.
Cover and refrigerate at least 2 hours or overnight.
Preheat oven to 425°F and line a baking sheet with parchment.
Arrange chicken on the sheet and roast 25 to 30 minutes until internal temperature reaches 165°F.
Rest 5 minutes before serving. Garnish with fresh herbs if desired.
