Yogurt Marinated Chicken is tender, flavorful chicken coated in a spiced yogurt marinade and roasted or grilled until juicy and lightly caramelized.

Ingredients

2 pounds boneless skinless chicken thighs
1 cup plain Greek yogurt
3 garlic cloves minced
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
1 teaspoon salt
1/2 teaspoon black pepper
Fresh chopped parsley or cilantro optional for garnish

Instructions

  • In a large bowl combine yogurt garlic lemon juice olive oil and spices. Mix until smooth.

  • Pat chicken dry and add to the bowl. Coat thoroughly with marinade.

  • Cover and refrigerate at least 2 hours or overnight.

  • Preheat oven to 425°F and line a baking sheet with parchment.

  • Arrange chicken on the sheet and roast 25 to 30 minutes until internal temperature reaches 165°F.

  • Rest 5 minutes before serving. Garnish with fresh herbs if desired.
